|Milk||1 Cup (16 tbs), hot|
|Gruyere cheese||1⁄2 Cup (8 tbs), grated|
? Preheat oven to 375 °F (190 °C). Grease a large baking dish with half of butter; set aside.
? Heat remaining butter in saucepan over medium heat. Sprinkle in flour and mix well; cook 1 minute over low heat.
? Pour in milk and mix well; season with salt, pepper and nutmeg. Cook 8 to 10 minutes over low heat, stirring occasionally. Set aside.
? Separate eggs, with whites all in one bowl and each yolk in a separate dish.
? Beat egg whites until stiff, then fold into white sauce. Pour this into baking dish.
? Using back of soup spoon, shape 8 spaced indentations in the white sauce/egg whites mixture. Carefully slide an egg yolk into each little hole.
? Sprinkle cheese over and bake 10 to 15 minutes in oven.
