Southern Curried Eggs
|Hot cooked rice||1|
|Onion||1 Tablespoon, chopped|
|Apple||1⁄4 Cup (4 tbs), chopped|
|Curry powder||1 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Hard cooked eggs||6|
Melt butter in heavy saucepan.
Add onion and apple and cook gently until tender.
Add flour, curry powder, salt and pepper, and let mixture bubble up well over low heat.
Remove from heat and add milk all at once.
Return to heat, bring to boil, boil 1 minute, stirring constantly.
Cut hard-cooked eggs in half lengthwise.
Reheat them in curry sauce.
