? Heat half of oil in nonstick frying pan over high heat. Add tomatoes, garlic, parsley and oregano; season well. Cook 7 to 8 minutes over medium heat. Transfer mixture to heated platter and set aside, keeping hot.
? Add remaining oil to frying pan over medium-high heat. Break in eggs and season. Cover and cook 3 to 4 minutes until whites are set.
? Slide eggs out onto hot tomato mixture and serve.
