Ingredients
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  All purpose flour 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Milk 2 Cup (32 tbs)
  Spinach 20 Ounce, chopped (frozen, cooked, drained)
  Lemon juice 1 Tablespoon
  Eggs 12 (poached)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
Directions

Combine butter, flour, salt, and pepper in medium saucepan over low heat.
Cook, stirring constantly, until smooth and bubbly.
Add milk and cook, stirring constantly, until mixture thickens.
Continue cooking and stirring for 1 minute.
