|Frozen egg substitute||1 Cup (16 tbs), thawed|
|Skim milk||1⁄4 Cup (4 tbs)|
|Non-fat sour cream||1⁄4 Cup (4 tbs)|
|Chopped green onions||1⁄4 Cup (4 tbs)|
|Vegetable cooking spray||1|
Combine first 5 ingredients in container of an electric blender or food processor; cover and process 10 seconds or until frothy.
Transfer mixture to a medium bowl; stir in green onions.
Coat a large nonstick skillet with cooking spray; place over medium heat until hot.
Add egg substitute mixture; cook, stirring frequently, until mixture is firm but still moist.
