Savory Egg Scramble
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Canned potatoes||8 Ounce, drained and sliced (1 Can)|
|Chopped chives||1 Teaspoon (Fresh Or Frozen)|
|Bacon bits||1⁄4 Cup (4 tbs) (Hormel Brand)|
|Chopped parsley||1⁄4 Cup (4 tbs)|
Melt butter in large skillet; saute onion, green pepper, potatoes, and chives over low heat until onions are transparent.
Beat eggs, salt, and pepper; mix in bacon and parsley.
Pour into skillet.
Cook over low heat, stirring constantly, until eggs reach desired consistency.
