|Butter||1⁄4 Cup (4 tbs)|
|Minced onion||1 Tablespoon|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Light cream||2 Cup (32 tbs)|
|Grated cheddar cheese||1⁄2 Cup (8 tbs)|
|Finely snipped parsley||1 Tablespoon|
|Sauteed sliced mushrooms||1 Cup (16 tbs)|
|Boiled ham slice||3 , cut in slivers|
|Hard-cooked eggs||6 , sliced|
Melt butter in a saucepan.
Add onion and cook until tender but not browned.
Stir in flour.
Remove from heat and stir in cream.
Cook over medium heat, stirring constantly, until smooth and thickened.
Add cheese, parsley, salt, and pepper and stir until blended.
Mix in mushrooms and ham.
Carefully fold in eggs.
Keep warm in a chafing dish.
