|Sausage meat||1 1⁄2 Pound|
|Egg||1 , lightly beaten|
|Fine dry bread crumbs||3⁄4 Cup (12 tbs)|
|Oil/Shortening||2 Cup (32 tbs) (For Deep Fat Frying)|
|French fried parsley||1 Tablespoon|
Using your hands, flatten sausage meat on a floured board and cut into 8 pieces.
Mold 1 piece of sausage meat around each egg, rolling and stretching meat in your hands until egg is completely covered.
Dip sausage-covered eggs in beaten egg, then into bread crumbs.
Deep-fry in oil heated to 370°F about 4 or 5 minutes, or until sausage is deep brown.
