Ingredients
  Hard cooked eggs 8 Medium
  Sausage meat 1 1⁄2 Pound
  Egg 1 , lightly beaten
  Fine dry bread crumbs 3⁄4 Cup (12 tbs)
  Oil/Shortening 2 Cup (32 tbs) (For Deep Fat Frying)
  French fried parsley 1 Tablespoon
Directions

Shell eggs.
Using your hands, flatten sausage meat on a floured board and cut into 8 pieces.
Mold 1 piece of sausage meat around each egg, rolling and stretching meat in your hands until egg is completely covered.
Dip sausage-covered eggs in beaten egg, then into bread crumbs.
Deep-fry in oil heated to 370°F about 4 or 5 minutes, or until sausage is deep brown.
