Onion Egg Scramble
|Firm tofu||8 Ounce (Soybean Curd)|
|Green onions/2 tablespoons snipped fresh / freeze dried chives||2 , chopped|
|Hot pepper sauce||8 Drop|
1 Place the tofu on paper toweling, press it to blot out excess moisture, then cut into 4 pieces. Place the tofu, eggs, green onions, honey, salt, and red pepper sauce in a food processor or blender. Whirl until smooth.
2 Coat a 10-inch nonstick skillet with cooking spray, then heat it for 1 minute over moderate heat. Add the egg mixture and cook for 5 minutes, stirring occasionally, or until the eggs are set.
