|Skim milk||1⁄3 Cup (5.33 tbs)|
|Potatoes||4 Cup (64 tbs), mashed|
|Eggs||8 , poached|
|Tomatoes||2 , sliced|
|Green pepper rings||8|
Mix the corned beef, bread crumbs, and milk in a bowl to make a paste. (If more moisture is needed, add small amounts of water to get the desired paste consistency.) Spread the meat- bread mixture on the bottom of a lightly greased tart pan; do not let mixture touch sides of pan.
Place mashed potatoes in a pastry tube fitted with a large decorative opening.
Pipe an edging around the meat-bread mixture.
Divide the central circle of meat-bread mixture into 8 even triangles by piping the remaining mashed potatoes into a spoke design.
Slip a poached egg into each triangle.
Bake at 425°F (220°C) until potato is browned.
Garnish with tomato slices and pepper slices.
