Quick Eggs For Two

|Potatoes||2 Small, boiled, peeled, and sliced|
|Red onion||1 Small, sliced and sauteed|
|Eggs||2 , hard cooked and sliced|
|Mushrooms||1⁄2 Cup (8 tbs), sliced and sauteed|
In the bottom of a nonstick skillet, layer the potatoes, onion, eggs, and then the mushrooms.
Season with salt and pepper to taste.
Add a small amount of water.
Cover and simmer over low heat until heated.
Lift out of skillet with a slotted spatula.
