Quick Eggs For Two

  Potatoes 2 Small, boiled, peeled, and sliced
  Red onion 1 Small, sliced and sauteed
  Eggs 2 , hard cooked and sliced
  Mushrooms 1⁄2 Cup (8 tbs), sliced and sauteed
  Salt To Taste
  Pepper To Taste

In the bottom of a nonstick skillet, layer the potatoes, onion, eggs, and then the mushrooms.
Season with salt and pepper to taste.
Add a small amount of water.
Cover and simmer over low heat until heated.
Lift out of skillet with a slotted spatula.
