|Mayonnaise||2 Cup (32 tbs)|
|Whole grain bread slice/3 pitas split in half and toasted||6 , toasted|
|Fresh tomato slices||6|
|Parsley sprigs||6 (For Garnish)|
Set a bowl of mayonnaise in a larger bowl of hot water in order to bring it to a warm temperature.
Stir it often and take care that it does not separate.
Top each slice with a tomato slice.
Heat in a low oven (275-300°F.) while poaching the eggs.
Place poached egg on top of tomato slice.
Spoon warm mayonnaise over the egg, letting it run down over the tomato and bread.
Top with a sprig of parsley and serve immediately.
