Baked Or Shirred Eggs

1. Preheat oven to moderate (350° F.).
2. Melt one teaspoon butter in an individual ramekin or any small heatproof dish. Break one or two eggs into each dish and bake ten to twelve minutes, until the white is milky and still creamy.
Note: There are many variations of this dish. To make shirred eggs Florentine, for example, buttered ramekins are lined with cooked, well-drained buttered spinach over which the eggs are broken.
Other ingredients which may be combined with the eggs to be shirred are tongue slices, cooked sausages, chicken livers or shrimp and other seafood.
Hot chicken gravy or veal gravy flavored with tarragon may be poured over the eggs after they are cooked.
