Cheddar Scotch Eggs
|Hard boiled eggs||4|
|Chopped chives/Spring onions||1 Tablespoon|
|Fat||2 Tablespoon (For Frying)|
|Grated cheddar cheese||3 Ounce|
|Sausage meat||12 Ounce|
|Breadcrumbs||1 Cup (16 tbs)|
Cut into halves very carefully.
Remove yolk, put into basin, mash, and add cheese, butter, chives, seasoning.
Mix well and press back into white cases.
Press the 2 halves together.
Divide sausage meat into 4 portions.
Flatten on lightly floured board.
Put egg on to this then wrap round in sausage meat.
Seal 'joints' very firmly.
Coat with beaten egg, roll in crumbs.
Fry steadily in deep fat until golden brown.
Drain very well on kitchen paper.
