Baked Veggie Eggs

K.C. Pomering the G-Free Foodie shows you how to make delicious Baked Veggie Eggs! These deliciously simple baked eggs are perfect for breakfast, brunch or even dinner. The toast is built right in to the dish!

Ingredients

White bread slice 2 , cut into rounds (Schar Artisan)
Broccoli 2 Tablespoon , cooked and chopped
Roasted red pepper 2 Teaspoon , chopped
Eggs 2
Salt To Taste
Pepper To Taste

Directions

GETTING READY:

Preheat oven to 400F.

Grease ramekins and place on baking sheet.

MAKING:

Place bread round into ramekin and top with broccoli and roasted peppers.

Sprinkle salt and pepper over it.

Make a well in veggies and crack egg into it.

Pop into oven and bake for 14-16 minutes.

Allow to cool before serving.

SERVING:

Serve and enjoy!
