Nova Scotia Eggs
|Smoked salmon||8 , thin slices|
|Lemon||1 Large, juiced|
|Mayonnaise||1 Cup (16 tbs)|
|Shredded lettuce||1⁄4 Cup (4 tbs) (For Garnishing)|
|Lemon slices||3 (For Garnishing)|
Place a slice of smoked salmon in the center of eight small individual plates and sprinkle with lemon juice.
Place a coddled egg on each slice of smoked salmon.
Coat each egg neatly with 2 tablespoons mayonnaise.
Cover plates individually with plastic wrap and refrigerate until ready to serve.
Serve with shredded lettuce around each egg and garnish with a thin slice or segment of lemon.
To coddle eggs: Place the eggs gently in a pan of boiling water and simmer for 5 minutes.
Plunge into a bowl of cold water immediately.
When cold, remove shell carefully.
