Coffee Filled Eclairs
|Cream puff pastry||1|
|Coffee syrup||4 Tablespoon|
|Confectioner's custard||1 Cup (16 tbs) (Basic Recipe)|
|Sifted confectioner's sugar||2 1⁄2 Cup (40 tbs)|
Prepare Cream Puff Pastry; pipe into eclairs, using 1-inch plain piping tube.
Bake 10 minutes at 400Â°F.
Reduce heat to 350Â°F; bake 25 minutes.
Make custard; let cool.
Add half the Basic Coffee Syrup and salt; mix well.
Split eclairs on one side; fill with custard mixture.
For frosting, mix remaining coffee syrup into confectioners' sugar; add enough warm water, several drops at a time, to make spreading consistency.
Spread over eclairs; chill until ready to serve.
