In order to get the maximum health benefits from eating garlic, you must crush it and allow it to stand for at least 10 minutes. Thereafter, you may either eat it raw or you can cook it for up to 6 minutes.
When the garlic is crushed its cell membranes get opened and start releasing alliinase, which is a significant enzyme for development of anti-clotting compounds. The most active of these compounds are allicin and thiosulphinate. When garlic remains uncrushed, the alliinase remains locked.
Further research in a food consultancy in Mendoza, Argentina, proved that allowing garlic to stand offers time for the alliinase to function in making the blood-thinning compounds, on the contrary overcooking garlic obliterates the enzyme.
This crushed garlic can be used in cooking various dishes where it not only enhances the taste but also increases the heath benefit of the dish. It can also be used as a salad dressing, it can be added to sauces and other such condiments or it may be added to melted butter used in making butter popcorn.
