Chicken And Dumplings

Ingredients
  Chicken 4 Pound
  Onion 1
  Celery 1
  Flour 3 Tablespoon
  Milk 1 Cup (16 tbs)
  Biscuit dumplings 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1.Start by cleaning and singeing the chicken
2.Also cut the chicken into serving portions

MAKING
3.In a pot, place the chicken and season it, also cover the chicken with water
4.Now cover the pot and simmer gently
5.If the chicken is an old fowl it will take 3-4 hours of cooking, if it’s a young chicken then 1 ½ hours
6.Now remove the cover during the last half-hour of cooking, reducing the broth to about 1 1/2 pints
7.Add biscuit dumpling to the pot, 20 minutes before serving
8.Remove dumplings to hot pan
9.Meanwhile, make a gravy by adding to the broth in the kettle 3 tablespoons of flour stirred to a paste in 1 cup of milk
10.Skim out the chicken, lay it on a platter, place the dumplings on top and cover with gravy

SERVING
11.Serve with a sauce of your choice or with salads
