Potato Dumplings

Ingredients
  Potatoes 9 Medium
  Salt 1 Teaspoon
  Eggs 3 , well beaten
  Sifted flour 1 Cup (16 tbs)
  Bread crumbs 2⁄3 Cup (10.67 tbs) (Farina)
  Nutmeg 1⁄2 Teaspoon
Directions

MAKING
1.In a boiler, boil potatoes in their jackets until soft
2.Then remove skins and press potatoes through a ricer
3.Add salt, eggs, flour, 2/3 cup bread crumbs and nutmeg
4.Make sure to mix thoroughly
5.Form mixture into dry balls about the size of walnuts (if mixture is too moist, add more bread crumbs)
6.Now drop balls into boiling salted water.
7.When balls come to the surface, boil uncovered for 3 minutes
8.Remove one from liquid and cut open; if center is dry, they are sufficiently cooked
9.Remove balls from liquid
SERVING
10.Serve cream sauce over the dumplings
