Short Ribs With Parsley Dumplings
|Beef short ribs||3 Pound|
|Salt||1 1⁄2 Teaspoon|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Water||3 Cup (48 tbs)|
Brown short ribs on all sides in lard; pour off drippings.
Season meat with salt, pepper and thyme.
Add onion and water; cover tightly and cook slowly1 1/2 hours, or until meat is tender.
Drop Parsley Dumplings by spoonfuls on short ribs; cover tightly and steam 12 minutes.
Thicken cooking liquid with flour for gravy if desired.
