Caramel Dumpling Pudding
|Water||1 Cup (16 tbs)|
|Packed brown sugar||3⁄4 Cup (12 tbs)|
|Vanilla extract||1 Teaspoon|
|Flour||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Evaporated milk||1⁄4 Cup (4 tbs)|
|Raisins||1⁄2 Cup (8 tbs)|
|Walnuts||1⁄4 Cup (4 tbs), chopped|
Bring the water and 1/4 cup of the brown sugar to a boil in a small saucepan over medium heat.
Remove from heat.
Add the butter and vanilla and stir until butter is melted.
Pour into a greased 1 quart baking dish.
Combine the flour, baking powder, nutmeg, salt and evaporated milk in a bowl and mix just until blended.
Stir in the remaining 1/2 cup brown sugar.
Fold in the raisins and walnuts.
Drop by spoonfuls over the brown sugar mixture in the baking dish.
Bake, uncovered, at 350 degrees for 30 minutes or until golden brown.
Spoon into individual serving dishes.
Top with ice cream.
