|Beef marrow||1 (From A 3- To 4-Inch Beef Marrow Bone 0.5 Cup Mashed)|
|Soft bread crumbs||1 Cup (16 tbs) (2 Slices)|
|Chopped parsley||1 Tablespoon|
Cut out marrow with a sharp thin-blade knife; mash to make 1/2 cup.
Combine with remaining ingredients in small bowl; blend well.
Form lightly into marble-size balls.
Set in a shallow pan; chill at least 1 hour (Dumplings will hold their shape better when chilled before cooking).
Cook, covered, on top of hot beef mixture 5 minutes.
