Rich Potato Dumplings
|Eggs||2 , slightly beaten|
|Cooked rice||3 Cup (48 tbs)|
|Sifted flour||2 Cup (32 tbs)|
|Melted butter||1 Cup (16 tbs)|
Combine eggs and potatoes; mix well.
Add salt to flour; blend into potato mixture.
Form into 1 1/2- inch roll; cut into 1-inch pieces.
Drop dumplings into boiling water gradually ; boil, covered, for 15 to 20 minutes or until cooked through.
Drain; roll in but- ter.
