|Dry bread slice||4|
|Beef liver||1 Pound, ground|
|Onion||1 Large, finely chopped|
|Bread crumbs||4 Tablespoon|
|Butter||1⁄4 Cup (4 tbs)|
|Calf liver||1 Cup (16 tbs), ground|
Soak bread in water.
Squeeze dry; crumble into bowl.
Combine liver, onion, egg, seasonings, crumbs and flour with bread; blend thoroughly.
Dip spoon into kettle of boiling salted water; spoon dumplings into water.
More bread crumbs may be added if mix- ture seems too soft.
Cook for 3 minutes; remove with slotted spoon.
Brown butter; pour over dumplings.
