Stewed Chicken And Raisin Dumplings

Yummy chicken is a great idea for your lazy Sunday lunch or even for the freind's party that you have planned for the weekend. Try this delicious stewed chicken and raisin dumplings it is truly a simple and easy dish to make. Lay out a spread that you would efeel proud of. You definitely need not spend the entire day slogging in the kitchen for great food
Ingredients
  Celery stalks 2
  Carrot 1
  Onion 1
  Stewing chicken 4 Pound
  Salt 2 Teaspoon
  Biscuit mix 1⁄4 Cup (4 tbs)
  Raisin cheese 1 Tablespoon
  Raisin-cheese dumplings 10
  Dumplings 1 Cup (16 tbs)
Directions

Cut celery and carrot into 1-inch pieces; peel onion.
Place chicken in large kettle; add celery, carrot, onion, salt and 1 quart boiling water.
Cover; cook over low heat for 2 to 3 hours or until tender.
Skim off excess fat.
Drop Raisin-Cheese Dumplings by spoon- fuls onto chicken pieces.
Cook for 10 minutes.
Cover; steam for 10 minutes without removing cover.
Remove chicken and dumplings from stock; place in heated serving dish.
Combine biscuit mix and 1/2 cup water; add to stock, stirring until thick- ened.
Pour gravy over chicken and dumplings.
