Wash and dry ripe apricots.
Roll out pastry and cut into circles large enough to enclose fruit.
Wrap each apricot in pastry and moisten edges and press together to seal.
Drop each dumpling into a pan of gently boiling water and cook for about 30 minutes.
Test fruit with skewer for tenderness.
Serve with butter and honey sauce.
