Delicate Liver Dumplings

Ingredients
  Calf's liver 1⁄4 Pound
  Butter/Margarine 2 Tablespoon
  Onion 1 Small, minced
  Egg 1 , beaten
  Fine dry bread crumbs 1⁄2 Cup (8 tbs)
  Minced parsley 2 Tablespoon
  Consomme/Bouillon /soup 2 Cup (32 tbs)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) With a knife, take out skin or tendons from liver. Chop very finely.

MAKING
2) In a skillet, melt butter and sauté onion for 2 or 3 minutes.
3) Stir in liver and cook for 5 minutes. Keep aside to cool.
4) Mix egg and bread crumbs. Combine to make a firm mixture.
5) Add salt and pepper and add parsley.
6) Shape into 3/4-inch balls.
7) In a skillet boil consommé, drop the balls into in. Cover and simmer for 15 minutes.

SERVING
8) Serve warm or cold.
