|Grated onion||1 Teaspoon|
|Grated lemon peel||1⁄4 Teaspoon|
|Eggs||2 , well beaten|
|Mashed potatoes||2 Cup (32 tbs), or riced|
|Flour||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
|Hot stock/Stew||1 Cup (16 tbs)|
1. Add the onion, lemon peel and eggs to the potatoes. Mix thoroughly.
2. Sift flour with salt and baking powder, add with crumbs and pepper to the potato mixture. Beat.
3. Drop from a tablespoon into simmering hot stock, or into meat or chicken stew about 30 minutes before serving. Cover tightly and simmer 30 minutes, without removing lid during this cooking time.
