Basil & Cheese Dumplings
|Snipped fresh chives/Sliced green onion||1 Tablespoon|
|Dried leaf basil||1⁄2 Teaspoon|
|Creamed cottage cheese||1⁄2 Cup (8 tbs)|
|Sifted all purpose flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
Melt butter or margarine in a small skillet.
Add chives or green onion and basil.
Cook, stirring constantly, until herbs soften.
Remove skillet from heat.
Stir in cottage cheese; set aside.
Sift together flour, salt and baking powder into a medium bowl.
Add cottage-cheese mixture.
Stir until combined.
Drop by rounded teaspoonfuls into simmering soup.
Cover soup and simmer until dumplings are firm, about 15 minutes
