|Coconut||1⁄2 Cup (8 tbs)|

|Egg||1 , beaten|
|Milk||1⁄4 Cup (4 tbs)|
In 3-quart saucepan combine cranberries, 1 1/4 cups sugar, water, and orange juice.
Cover and simmer, stirring occasionally, 5 to 8 minutes or till cranberries have popped.
Meanwhile, stir together Biscuit Mix, coconut, and 1/4 cup sugar.
Combine beaten egg and milk.
Stir into dry ingredients just till moistened.
Spoon batter into eight dumplings atop hot mixture.
Simmer 10 minutes.
Cover; simmer 2 minutes.
