Crispy Duck

Crispy Duck is a Chinese duck preparation which is made by roasting a whole duck until crisp on the outside and then glazing it with a sauce. The crispy duck is seasoned with salt and pepper prior to roasting it in an oven, and a sauce is prepared by simmering together sake (rice wine), honey, miso and grated ginger. This sauce is used for glazing the crispy duck once it is cooked. Both rice and noodles go well as side dishes along with the crispy duck.
