Heavenly Boiled Duck
|Onion||1 , minced|
|Bean paste||1 Teaspoon|
|Dry white wine||2 Quart|
Wash the duck, cut off the tail and oil sacs and discard them.
Dry the duck thoroughly.
Place the onions and bean paste inside the duck.
Place the wine in a large saucepan and bring to a boil.
Add the salt and lower the duck into the liquid.
Cover the saucepan tightly and place on an asbestos pad over low heat and simmer for 5 hours.
Remove very carefully onto a deep serving bowl, cover with broth and serve immediately.
