Roast Wild Duck
|Olive oil||1⁄4 Cup (4 tbs)|
Singe, draw and clean; wash inside and outside thoroughly.
Combine olive oil, salt and pepper, and brush bird all over with mixture.
Insert apple in cavity, and place bird, breast side up, on rack in open shallow pan.
Arrange bacon strips over breast, securing with toothpicks if necessary.
Roast bird 25-35 minutes at 425°F., basting several times during cooking.
Good accompaniments for wild duck are candied sweet potatoes and apple-celery salad with sliced-orange garnish.
Note: Allow 1 pound wild duck, drawn weight, per serving.
