Wild Duck Gumbo
|Flour||1 Cup (16 tbs)|
|Bacon drippings||1 Cup (16 tbs)|
|Garlic||2 Clove (10 gm)|
|Wild duck||2 , disjointed|
|Red peppers||1 Tablespoon|
|Cayenne pepper||To Taste|
|Green onion tops||1|
|Chopped parsley||1 Tablespoon|
Brown flour in bacon drippings in Dutch oven, blending well.
Cook until flour is rich brown.
Add onion and garlic; saute until tender.
Season duck well with red pepper and cayenne pepper; cook in onion mixture for about 5 minutes.
Add 2 quarts warm water; simmer for about 2 hours.
Season with pepper and salt.
Add small amount of onion tops and parsley and oysters; simmer for about 30 minutes.
Add gumbo file to taste.
Serve over cooked rice.
