Roast Duck

Ingredients
  Duck 5 Pound (1 whole)
  Chopped onions 4 Tablespoon
  Chopped celery 4 Tablespoon
  Cinnamon 1⁄2 Teaspoon
  Star anise 1⁄2 Teaspoon
  Soy sauce 1⁄2 Cup (8 tbs)
  Sugar 2 Teaspoon
  Sherry 2 Tablespoon
  Salt 1 Tablespoon
  Honey 1⁄4 Cup (4 tbs)
  Vinegar 2 Tablespoon
Directions

GETTING READY
1) Preheat the oven to 475°F and oil a shallow roasting pan.
2) Clean the duck, removing as much fat as possible.
3) Tie the ducks neck.
4) In a saucepan, combine together onion, celery, cinnamon, anise, soy sauce (reserve 1 tablespoon), sugar and sherry.
5) Bring the mixture to a boil and pour into duck.
6) Sew the opening.
7) Rub the duck skin with salt.

MAKING
8) Place the duck on the roasting pan.
9) Place the pan on a rack in the oven and roast for 30 minutes.
10) Pour off the excess fat.
11) In a bowl mix together the honey, vinegar and remaining soy sauce.
12) Brush the duck with the soy sauce mixture.

FINALIZING
13) Reduce the oven heat to 375° and roast for 2 ½ hours more.
14) Brush the duck with the soy sauce mixture after every half an hour.
15) Remove the pan from the oven and snip the threads.
16) Drain the duck and reserve the sauce.

SERVING
17) Cut the duck in small pieces and serve with the reserved sauce.
