Citrus Glazed Wild Duck

Ingredients
  Wild ducks 2 , dressed
  Oranges 2 , quartered
  Onion 1 Large, quartered
  Celery rib with tops 2 , cut up
  Lime juice 1⁄2 Cup (8 tbs)
  Lemon juice 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Season ducks inside and out with salt and pepper.
Stuff cavities with oranges, onion and celery.
Skewer cavities.
Combine lime and lemon juice.
Rub skin with some of the citrus juice.
Roast at 350°F.for 3 hours.
Remove from oven and let stand 10 minutes.
Skim fat from drippings.
Add citrus juice to drippings.
Cut ducks in half.
Roast 400°F.10 minutes, basting with juice, then roast an additional 10 minutes to set glaze.
Good with wild rice and lime wedges.
