Breast Of Duck With Raspberry Mayonnaise
|Duck breast||1 Pound, skinned and cut into 2 inch pieces|
|Chopped watercress||3⁄4 Cup (12 tbs)|
|Quartered water chestnuts||1⁄2 Cup (8 tbs)|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Raspberry vinegar/1/2 teaspoon raspberry jelly combined with 1 tablespoon rice vinegar||1 Tablespoon|
|Red leaf lettuce||4|
|Chopped parsley||1 Tablespoon (For Garnish)|
In a large bowl, gently combine the duck, watercress, and water chestnuts.
In a small bowl, combine the mayonnaise and vinegar.
Pour over the duck mixture and toss until all pieces are coated.
Arrange lettuce on a serving dish, curly side towards the edge, and gently mound duck mixture in the middle.
Garnish with parsley, if desired, chill.
