Ingredients
  Duck breast 1 Pound, skinned and cut into 2 inch pieces
  Chopped watercress 3⁄4 Cup (12 tbs)
  Quartered water chestnuts 1⁄2 Cup (8 tbs)
  Mayonnaise 1⁄4 Cup (4 tbs)
  Raspberry vinegar/1/2 teaspoon raspberry jelly combined with 1 tablespoon rice vinegar 1 Tablespoon
  Red leaf lettuce 4
  Chopped parsley 1 Tablespoon (For Garnish)
Directions

In a large bowl, gently combine the duck, watercress, and water chestnuts.
In a small bowl, combine the mayonnaise and vinegar.
Pour over the duck mixture and toss until all pieces are coated.
Arrange lettuce on a serving dish, curly side towards the edge, and gently mound duck mixture in the middle.
Garnish with parsley, if desired, chill.
