Stir Fried Duck With Leeks
|Vegetable oil||4 Tablespoon|
|Leeks||2 , thinly shredded|
|Red pepper||1 , seeded and sliced|
|Fresh root ginger||1 Centimeter, peeled and thinly sliced|
|Garlic||3 Clove (15 gm), finely chopped|
|Black bean paste||2 Tablespoon|
|Cooked boneless duck||500 Gram, cut into strips|
|Light soy sauce||2 Tablespoon|
|Rice vinegar||2 Tablespoon|
|Brown sugar||2 Teaspoon|
|Chili sauce||2 Teaspoon|
In a wok, heat oil until just smoking.
Add leeks, pepper (capsicum), ginger and garlic.
Stir fry briefly to coat with oil, then stir in black bean paste and stir fry for 5 minutes until vegetables begin to soften.
Add duck and remaining ingredients and stir fry for 2-3 minutes until duck is heated through.
