Duck! Who doesn€™t love biting into a piece of tender sweet baked and stuffed duck? This duck preparation is simply by far the most delicious one that I have had. Serve the Duck for your family , I am sure they will love it!
Ingredients
  Young duck 5 Pound
  Raw potatoes 2 Pound
  Chopped thyme 1⁄2 Teaspoon
  Onions 2
  Sage leaf 1 , crumbled
  Butter 1 Tablespoon (The Duck Liver, Chopped)
  Goose drippings/Beef drippings 1 Tablespoon (The Duck Liver, Chopped)
  Salt To Taste
  Pepper To Taste
Directions

Stuff the duck.
Lard it with the goose or beef drippings.
Put it in a hot oven (400°) for 20 minutes.
Baste it.
Lay the duck on its side so that the legs will cook well.
Reduce the heat to 350°.
After another 20 minutes, baste again and turn the duck on his other leg and leave him so for 10 minutes.
Finish baking the duck on his back so that the breast will get brown.
Time 1 1/4 to 1 1/2 hours.
