|Butter||1 Tablespoon (The Duck Liver, Chopped)|
|Goose drippings/Beef drippings||1 Tablespoon (The Duck Liver, Chopped)|
Stuff the duck.
Lard it with the goose or beef drippings.
Put it in a hot oven (400°) for 20 minutes.
Lay the duck on its side so that the legs will cook well.
Reduce the heat to 350°.
After another 20 minutes, baste again and turn the duck on his other leg and leave him so for 10 minutes.
Finish baking the duck on his back so that the breast will get brown.
Time 1 1/4 to 1 1/2 hours.
