Ingredients
  Duck 4 Pound
  Butter 2 Tablespoon
  Honey 2 Tablespoon
  Butter 4 Tablespoon
  Walnuts 2⁄3 Cup (10.67 tbs), chopped
  Onion 2 Tablespoon, chopped
  Breadcrumbs 1 Cup (16 tbs)
  Parsley 1 Tablespoon
  Chervil 1 Tablespoon
  Thyme 1 Tablespoon
  Cinnamon 1 Pinch
  Orange rind 1
  Raw egg 1 , lightly beaten
  Dry white wine 1⁄4 Cup (4 tbs)
  Grand marnier 1⁄4 Cup (4 tbs)
  Cherries 2 Tablespoon (For Garnishing)
Directions

GETTING READY
1 Preheat the oven to 425 degrees F.

MAKING
2 In a pan, heat the butter.
3 Add in chopped walnuts and onions, sauté lightly.
4 Remove from the heat and add in the remaining ingredients except butter and honey.
5 Stuff the duck using this prepared mixture and truss.
6 In a bowl, combine the butter and honey.
7 Evenly spread all over the surface of the duck.
8 Place on a rack and roast for 1 3/4 hours turning the duck once.
9 The skin will blacken and become crisp with the honey.

SERVING
10 Cut the duck into quarters.
11 Garnish with watercress and brandied peaches or cherries.
