Beach Bellini Cocktail

Heading to the beach for Memorial Day? Are gas prices making a weenie-roast around the inflatable kiddy pool look more likely? Either way, Anthony and Ashley will help you bring a taste of the Italian Riviera to your holiday with this jazzed-up version of the Peach Bellini.
  Lemon rub 3⁄4 Ounce
  Peach schnapps 3⁄4 Ounce
  Peach nectar 1⁄2 Cup (8 tbs)
  Ice 1 Cup (16 tbs)

1 In a wine glass, combine the lemon rub, and peach schnapps.
2 Pour in the peach nectar, just enough to fill the glass, leaving about an inch of space empty near the rim.
3 In a cocktail shaker, add the ice cubes.
4 Transfer the prepared drink to the cocktail shaker and shake for 20 - 30 seconds or until frost appears on the shaker.
5 Strain the drink back into the glass. This will ensure that your drink is chilled without having to serve it on the rocks.

6 Serve at once.
