Bacon Dressing

Ingredients
  Bacon fat 3 Tablespoon
  Plain flour 1 Tablespoon
  Grated onion 2 Teaspoon
  Freshly ground pepper 1⁄2 Teaspoon
  Sugar 1⁄4 Teaspoon
  Prepared mustard 2 Teaspoon
  Vinegar 1 Tablespoon
  Water 1 Cup (16 tbs)
  Salt To Taste
Directions

Melt the bacon fat in a fry pan, slowly stir in the flour and onion and cook, stirring constantly, for 2 minutes. Add the pepper, sugar, mustard, and vinegar. Blend and stir, then slowly add 1 cup water. Continue to stir and cook over medium heat until thickened. Add salt to taste. Can be served hot or cold.
Very good on bitter or robust greens, such as spinach, curly endive or witloof
