Potato Salad With Parsley Dressing

Ingredients
  Cooked potatoes 3 Cup (48 tbs), peeled and sliced
  Hard boiled egg whites 2
  Chopped scallions 1⁄2 Cup (8 tbs)
  Pickle relish 2 Tablespoon
  Dijon mustard 1⁄2 Tablespoon
  Nonfat mayonnaise 1 Tablespoon
  White wine vinegar 1⁄2 Teaspoon
  Nonfat buttermilk/Skim milk 1 Tablespoon
  Chopped parsley 1⁄4 Cup (4 tbs) (Use Fresh Variety)
  Cayenne pepper 1 Pinch
  Black pepper 1⁄4 Teaspoon
Directions

1. Combine potatoes, egg whites, scallions, and pickle relish.
2. Combine Dijon mustard, mayonnaise, white wine vinegar, buttermilk, parsley, cayenne pepper, and black pepper.
3. Combine dressing with potato mixture.
