Avocado Accordion Salad With Pineapple-Honey Dressing
|Ripe california avocados||2|
|Canned pineapple/Juice from canned pineapple||4 (With Juice Lemon Juice)|
|Cottage cheese||1 Pint|
|Creamy mustard sauce||1 Tablespoon|
Cut avocados lengthwise into halves; remove seeds and skin.
Cut each half crosswise into 4 pieces.
Sprinkle avocados with enough lemon juice or pineapple juice to coat.
Cut pineapple slices into halves.
Line four salad plates with greens.
Spoon cottage cheese over greens to make "beds" for avocados.
Reassemble one avocado half over each serving of cottage cheese, alternating avocado pieces with pineapple halves.
Serve with Pineapple-Honey Dressing.
