Fruit Salad With Citrus Dressing
|Canned unsweetened pineapple tidbits||8 Ounce|
|Cornstarch||1 1⁄2 Teaspoon|
|Unsweetened orange juice||1⁄4 Cup (4 tbs)|
|Lemon rind||1⁄4 Teaspoon|
|Ground cinnamon||1 Dash|
|Seedless red grapes||1 Cup (16 tbs)|
|Lemon juice||1 Teaspoon|
Drain pineapple, reserving 1/4 cup juice in a 2-cup glass measure.
Set pineapple aside.
Add cornstarch to reserved juice, stirring until well blended.
Stir in orange juice, lemon rind, and cinnamon.
Microwave at HIGH for 1 1 1/2 ro 2 minutes or until mixture begins to boil; stir.
Microwave at HIGH for an addirional 30 seconds to 1 minute or until thickened.
Cool; cover and chill thoroughly.
Combine reserved pineapple, grapes, banana, kiwifruit, and lemon juice in a medium bowl; toss gently.
Spoon equal amounts of fruit into orange cups, place each cup on a lettuce leaf.
Serve with 2 tablespoons dressing per serving.
