Pears In Lime Dressing
|Lime juice||1⁄4 Cup (4 tbs)|
|Snipped mint leaves||1 Tablespoon|
|Vegetable oil||3 Tablespoon|
Mix lime juice and mint.
Let stand at room temperature at least 1 hour.
Remove mint and discard.
Shake lime juice, oil, honey and lime peel in tightly covered container.
Cut each pear lengthwise into halves; remove core and seeds.
Place each pear half, cut side down, on cutting surface.
Cut crosswise diagonally into thin slices.
With spatula, place each pear half on lettuce leaves; separate and overlap slices slightly, retaining pear shape.
Drizzle lime juice mixture over pears.
Garnish with mint leaves if desired.
