Japanese Carrot-Ginger Dressing: A Healthy Twist On An Old Favorite

Almost everyone I know just loves that delicious carrot-ginger dressing they serve up in nearly all Japanese restaurants around the world. Made with sweet carrots and spicy ginger, that dressing can make a salad lover out of the most ardent beef eaters and today I have a super healthy version of that dressing that you can whip up quickly and keep on hand for a week's worth of delicious salads in your home!
Ingredients
  Carrot 3 Medium, chopped
  Ginger 1⁄4 Cup (4 tbs), chopped finely
  Shallots 1⁄4 Cup (4 tbs), chopped finely
  Rice wine vinegar 1⁄4 Cup (4 tbs)
  Tamari sauce 1 Tablespoon
  Asian sesame oil 1 Tablespoon
  White miso paste 2 Tablespoon
  Flaxseed oil 1⁄2 Cup (8 tbs)
  Water 1⁄4 Cup (4 tbs) (Optional)
Directions

MAKING
1. In a blender, combine carrots, shallots, ginger, flaxseed oil, tamarind sauce, sesame oil, rice wine vinegar and miso paste. Blend it until smooth.
2. Add miso paste if required. Even the consistency with water if required.

SERVING
3. Serve with salad.
