Easy Raw Creamy Coconut Salad Dressing

Ingredients
For dressing
  Coconut meat 1 Cup (16 tbs)
  Ginger 1⁄2 Teaspoon
  Scallions 1⁄4 Cup (4 tbs), chopped finely
  Coconut water 1 1⁄2 Cup (24 tbs)
For salad
  Spinach 1⁄2 Cup (8 tbs)
  Romaine 1⁄2 Cup (8 tbs)
  Arugula 1⁄2 Cup (8 tbs)
  Zucchini 1 Large
Directions

MAKING
1. In a blender, blend coconut water, coconut meat, ginger and scallions.
2. Pour it in a bowl.
3. For making salad, in a dish, mix all the greens together.

SERVING
4. Serve it a as dip with salad or simply pour it on salad.
