Coleslaw With A Boiled Dressing

Ingredients
  Egg yolks 3 , beaten
  Sugar 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Dry mustard 3⁄4 Teaspoon
  Milk 1 Cup (16 tbs), scalded
  Cider vinegar 1⁄3 Cup (5.33 tbs)
  Cabbage 1 Large, shredded
Directions

In top of double boiler combine egg yolks with sugar, salt and mustard.
Gradually stir in scalded milk.
Cook over hot water, stirring constantly, until thick and smooth.
Remove from heat, and stir in vinegar.
Pour hot dressing over shredded cabbage.
Cool; then refrigerate.
Note: This dish is pretty garnished with radish "roses."
